Kate’s Weekend Oaty Pancakes (no flour)
This is my go to breakfast on the weekend – they are quick and easy to make and they’ll also give you plenty of fuel to keep you going for ages! It’s always a treat to have something different from your usual week day breakfast too.
You can experiment with the toppings and find the ones you like. My favourites include: Seeds, plain yogurt, almond butter and pecan nuts but the choice is yours!
Unlike the usual pancake mix which contains flour & milk, this is a no flour option using oats instead. These help keep your energy levels stable and won’t spike your blood sugars which lead to energy dips.
Topping them with protein or healthy fat toppings such as nuts and seeds will also help fuel you, and the pancakes are cooked in a little coconut oil – so a good fat!
The pancake mix is a combination of 3 ingredients: mashed banana, oats and eggs.
(But don’t worry if banana isn’t your thing, you can replace this with some stewed apple instead.)
An Extra Option: Add cinnamon (if you like the flavour) and two teaspoons of chia seeds into the mix for an extra dose of goodness.
You will need:
2 mashed banana (ripe is best – if you don’t like banana then use stewed apple instead)
1⁄2 teaspoon of cinnamon (optional)
How to Make it:
Combine in a bowl
Then add 1 1⁄2 cups of chunky oats and a splash of milk if the consistency looks too thick.
Heat the pan with a little coconut oil and fry in batches. These are quick to cook and you can top with yogurt, seeds, fruit, almond butter for a fantastic weekend breakfast.
